During our stay at The Elizabeth, we dined at their restaurant - The Emporium: An American Brasserie - twice (once for dinner & once for brunch). We were very impressed with the food quality and level of service on both visits. It was so nice to be able to stay onsite at the hotel, relax, unwind and have creative dishes & stellar hospitality at our fingertips when it came to dining.
For dinner at The Emporium, we were seated in the main dining room. The aesthetic of the restaurant was cozy (yet elevated) & inviting with wood tones & warm, ambient lighting. Our server, Emily, had stellar recommendations and ensured we had everything we needed while we dined.
We started off our meal with cocktails. Ross had the Mr. Vida made with del maguey Vida mezcal, amaro nardini, mr. black coffee liqueur, fee brothers aztec bitters, regans' orange bitters. This cocktail was very coffee forward with a nice nose of citrus.
I had the Harvest Moon made with epsolón blanco tequila, solerno blood orange liqueur, orange, lime, agave, & a black salt rim.
For Small Plates we had the Bison Tartare, Moules Mariniere, & the Brussels Sprouts - all of these small plates were fabulous, and we'd order each one again. It was a strong start to the meal.
The Bison Tartare was made with smoked red pepper coulis, roasted garlic aioli, shoestring shallot, shaved egg yolk, cilantro, sea salt & vinegar potato chips. The tartare was beautiful and gamey; the roasted garlic aioli gave great zing to the meat.
The Moules Mariniere were made with pei mussels, chablis, sweet cream butter, shallot & garlic, herbs, & served with toast points. The mussels came in a lovely, savory broth - they had a soft texture which went well on the crisp buttered toast.
The Brussels Sprouts were made with orange jalapeno infused honey, toasted pistachio, & sea salt. The hot honey was mouthwatering & made the brussels sprouts sticky & spicy.
For Large Plates we had the Salmon En Croute and the Scallops Noir.
The Salmon En Croute was made with verlasso salmon, gremolata, puff pastry, shaved fennel & citrus salad. We loved the unique presentation of the salmon; the buttery puff pastry enveloped the mild fish and really upgraded its flavor profile.
The Scallops Noir were made with pan seared sea scallops, squid ink bucatini, cauliflower puree, & charred broccolini. The scallops were bouncy in texture and delicate in flavor.
For dessert we had Baileys Cheesecake which was a special for the weekend.
We headed back to The Emporium for brunch the next morning and we were seated at the bar. Mixologist Rolland took exceptional care of us - his wit & humor made our dining experience & he took charge creating off menu cocktails that were amazing. Manager Will also checked in & ensured our brunch went off without a hitch.
Rolland called my first cocktail The Barbie. The Barbie was made with raspberry, mint, limeade, elderberry liquor, & sparkling grapefruit. This cocktail was effervescent with sweet, juicy raspberries rushing onto the palate; a refreshing way to say hello to spring.
My second cocktail was made with cantaloupe, lime juice, warm spices, mint, & Tito's. The combo of sweet melon and mint were delicious.
For food, we started off sweet with Beignets & a Pancake. The beignets were hot, doughy pillows coated generously in powdered sugar. They had a thin, crisp, golden exterior that gave way to chewy, sweet dough. Dipping these bad boys in the chocolate sauce made for sinfully delicious bites.Â
The Pancake was large and decorated in chocolate chips & blueberries. The chocolate chips dominated each bite in their thick, melty-ness while the citrus of the blueberries, and fluffy pancake, cut through the chocolate nicely.Â
For savory brunch dishes, we had the Hatch Green Chili Breakfast Burrito and the Biscuits & Gravy. The Burrito was made with chorizo, pepper trio, onion, potato, jack cheese, green chili, & cotija.

Should be NO stars!
I live in CO half of the year and the other half in Geneva, Switzerland (French Side) If this restaurant is considered a brassiere then people in Fort Collins are being fooled. Really?? People book your tickets to Paris and eat in a real brassiere!
We booked our NYE dinner for 8:30 and emphasized a standard table. Once again (maybe because I booked under my maiden name "Hermoso" and perhaps they are racist), they say us in a high chair table next to the entrance and a a column. Worst table in the restaurant. Ten minutes later a waitress comes and said that she was just assigned to help us. We asked to be moved, she called her Manager and this condescending person said that she cannot move us "unless you want your dinner served in the lobby." REALLY?! What a racist place? I had Christmas dinner here with a friend. The Emporium is located downtown at the corner of Walnut St and Chestnut St. You will need to park on the street. There are plenty of parking options nearby the restaurant and not too far away, within a very reasonable walking distance.
As you enter The Emporium, it has an elegant feel to it and it's very spacious. While sitting at our table I didn't feel cramped nor feel as ifother patrons practically sitting at our table. They offered a three course meal for Christmas dinner. For starters they offered a Smoked Potato & Leek Soup or Roasted Acorn Squash & Field Green Salad. For the main entree they offered Black Pepper Crusted Prime Rib, Pesto Glazed Verasso Salmon, Rack of Lamb or Butternut & Mushroom Risotto. For dessert they offered Chocolate Peppermint Swiss Roll or Spiced Orange Buttermilk Pie.
I ordered the Roasted Acorn Squash & Field Green Salad, Rack of Lamb, and Spiced Orange Buttermilk Pie. Salad was fantastic! Roasted Acorn Squash was done well. It was great on a dinner roll they serve you at the start of the meal. Rack of Lamb was really good. Meat was tender and not overdone. I chose the Spiced Orange Buttermilk pie for dessert. It wasn't too sweet and you could taste all the flavors.
I loved the portion sizes here. They didn't overdo it. Too many restaurants provide too much for portion sizes. Ambiance is fantastic here. Service was exceptional as well. Our waitress was very pleasant. She has such a pleasant smile on her face and a very kind demeanor. I very much enjoyed being served by her. I believe her name is Amber.
I walked out of here feeling satisfied but not stuffed. I was very impressed with my meal and experience here. I would love to return for a non-holiday meal. I recommend checking out The Emporium for a quay meal and experience. Also, look at the menu and review their prices before dining here to ensure that it fits your budget.

Very average.....better choices in vicinity I think. Coffee was good the biscuits and gravy were bland.

Great food, nice atmosphere and right in the heart of Old Town. Definitely check this place out when deciding on where to go out to dinner!

I would recommend arriving early since they filled up quickly.

I had the crayfish chowder and the 8 Oz steak while my wife had the blue cheese and blood orange salad and the shrimp and grits. Both of us loved our choices.
Lovely view of the the Old Town lights also.
My tip is come early. We arrived at 5:30 and the place was lightly full. By 6:30 it was packed! - Jan 23, 2023
This restaurant is on the first floor of the Elizabeth Hotel. It's very cute and nicely lit. They have a pretty good wine selection and have bottles displayed in a way that separates the dinning from the bar. I was dinning alone so I sat at the bar. I thought the service was so so. It took a while for them to take my food order. In their defense there probably should have been another bartender/server. They were pretty busy making drinks for the dinning room.
I ordered the seared salmon as my entree. It was well balanced the beet purée was not overwhelming and was well balanced with the cranberry mostrada. Some pieces of the crispy kale had stems which were not edible. Overall, this was a good dish.

Our small nonprofit met here on 11/28/2023 at 2:00 p.m. The space is modern, clean & bright, but the food menu is very limited. (I didn't look at the drinks menu.) I ordered clam chowder, which was mediocre - only slightly better than canned. The waiter was excellent, however; very attentive and friendly. (I think his name was Brynn, but am not sure.)
Our waiter brought a happy hour menu to our table when we were just wrapping up our meeting, and this menu looked much better than the previous one we were given.

So I've been staying at the hotel for a couple days, having stayed many times before. Usually i don't eat at hotel restaurants. However, the Emporium is the best food I've had in a hotel in years. The Sunrise Sammy is the best breakfast sandwich I have ever had. In addition, the cocktail list is superb. If you have a chance, have the bitter apricot. Totally delicious!

Enjoyed an early dinner with fam on a Sunday afternoon. The Emporium is a pretty cool place. Most of the fam ordered the Bison Stroganoff. Keep in mind this entree is a bit different than traditional stroganoff served with egg noodles. This dish featured a potato mash instead. Overall, it was quite tasty--the bison being very tender. The waitstaff was very personable but I have to say service was quite slow. There was a long gap of time we waited to have our main entree order taken after polishing off our appetizers. Lesson learned. I highly recommend placing your order for appetizers, entree and dessert all at once.

Made the 45 minute drive from Cheyenne, Wyoming to meet up with family for brunch. I have driven by this place so many times, but never went inside. What an adorable vibe!
I was seriously overwhelmed by the menu because everything looked so good. I asked our server for her recommendation, and two of the three she mentioned were dishes I was considering. I ended up going with the French toast croque and I was not disappointed!
My plate of food was massive and the prices were incredibly reasonable. What's more, I came home with leftovers. I'm not kidding when I say that I think that one meal will feed me 3 to 4 times.
The other people in my group ordered shrimp and grits, biscuits and gravy, and French toast. Everyone raved about their meal. They have tons of French cocktails. I didn't partake since I was driving, but the list was very tempting.
One member of our group started with a yogurt parfait, and we shared the cinnamon bites as a table. I don't recall what they were called on the menu, but they were delicious and totally worth it. They were served with cream cheese that was lightly flavored with orange.
